Thai Egg Custard (Kai Dtun)

Ingredients:

  1. Eggs- 3
  2. Soy sauce- 1 tsp
  3. Black pepper powder- ½ tsp
  4. Chicken stock- ½ cup
  5. Chopped scallions- 2 tbsp
  6. Chopped cilantro(coriander)- 2 tbsp
  7. Salt to taste

Method:

  1. Beat the eggs in a mixing bowl.
  2. Add chicken stock, half of the cilantro and scallions, pepper powder, salt and soy sauce.
  3. Whisk the mixture and shift into oven proof bowl.
  4. Add the water to a steamer and bring to boil.
  5. When the water is boiling place the bowl with egg mixture and cover the lid.
  6. Steam for 10-12 minutes or until the mixture cook.
  7. Garnish with remaining scallions(spring onions) and cilantro.
  8. Egg custard is ready to serve.
