Rice Noodle Salad
Ingredients:
- Fried tofu- 1 cup(use cottage cheese if tofu is not available)
- Rice noodles(boiled)- 1 cup
- Chopped onion- 1
- Chopped mushrooms- 2-3
- Cherry tomatoes- 6-7
- Soy sauce- 2 tsp
- Tomato sauce- 1 tbsp
- Chopped celery
- Salt and pepper to taste
Method:
- Shift mushrooms, onion and tomatoes in refrigerator for an hour.
- Cut tofu into small cubes and mix with all the vegetables and boiled noodles.
- Toss with soy sauce, tomato sauce, salt and pepper.
- Mix well and serve immediately.
