<h4>Ingredients:</h4>
<ol>
<li>Cottage cheese(paneer)- 450 gms</li>
<li>Mushrooms(sliced)- 4</li>
<li>Butter/oil- 4 tbsp</li>
<li>Cumin seeds- 1 tsp</li>
<li>Asafoetida- a pinch</li>
<li>Ginger-garlic paste- 1 tsp</li>
<li>Onion paste- 1 cup</li>
<li>Crushed tomatoes- 250 gms</li>
<li>Red chilli powder- 1 tsp</li>
<li>Green chillies- 4</li>
<li>Coriander powder- 1 tsp</li>
<li>Turmeric- 1 tsp</li>
<li>Pav bhaji masala- 2 tbsp</li>
<li>Fenugreek powder- ½ tsp</li>
<li>Salt to taste</li>
<li>Cream- 2 tbsp</li>
<li>Water- 1 cup</li>
<li>Chopped coriander- 1 tbsp</li>
</ol>
<h4>Method:</h4>
<ol>
<li>Cut the paneer into 1½ inch cubes.</li>
<li>Heat 1 tbsp butter in a pan.
<li>Add paneer cubes and mushroom slices, fry for 3-4 minutes on slow flame.</li>
<li>Now heat 3 tbsp oil in a griddle (tawa), add cumin seeds and asafoetida.</li>
<li>When cumin seeds start to spluttering, add green chillies.</li>
<li>After few seconds, add ginger-garlic paste and onion paste.</li>
<li>Saute for a minute, add turmeric, chilli powder, coriander powder and salt.</li>
<li>Add crushed tomatoes and stir for 2 minutes.</li>
<li>Now add cream, fenugreek powder, pav bhaji masala, fried paneer and mushrooms.</li>
<li>Mix well, add water and cook till the gravy thickens( 6-8 minutes).</li>
<li>Sprinkle chopped coriander and serve hot with roti or parathas.</li>

<h4>Ingredients:</h4>

<li>Full cream milk- 2 liter(for 250 gms)</li>
<li>Lemon- 2 tbsp</li>
</ol>
<h4>Method:</h4>
<ol>
<li>Take full cream milk in a heavy vessel pan.</li>
<li>When milk start to boiling, add the lemon juice.</li>
<li>Simmer for 4-5 minutes, keep stirring.</li>
<li>When the milk curdles, switch off the gas.</li>
<li>Wait for 2 minutes, strain through a cotton/muslin cloth.</li>
<li>Put some weight over the cheese(with cloth) for an hour.</li>
<li>Paneer is ready to use as required.</li>

<li>Fresh cheese(paneer)- 250 gms</li>
<li>Oil for cooking- 1 tbsp</li>
<li>Water- 1 cup</li>
<li>Corn flour- 5 tbsp</li>
<li>Plain flour- 3 tbsp</li>
<li>Garlic-garlic paste- 3 tsp</li>
<li>Fine chopped green chillies- 2-3</li>
<li>Chopped spring onion- 3 tbsp</li>
<li>Soy sauce- 4 tsp</li>
<li>Salt to taste</li>
<li>Oil for frying</li>
<li>Chopped spring onion- 1 tbsp</li>
</ol>
<h4>Method:</h4>
<ol>
<li>Cut the Paneer into small cubes and marinate with salt and 2 tbsp ginger-garlic paste.</li>
<li>Keep the marinated Paneer cubes for 10-15 minutes.</li>
<li>Add plain flour, 3 tbsp corn flour, salt and remaining ginger-garlic paste in a bowl.</li>
<li>Knead with little water to make a smooth batter.</li>
<li>Heat oil in a pan and dip the paneer cubes in batter and fry until light brown.</li>
<li>Take a another pan and heat the oil, add green chillies, salt, spring onion and soy sauce.</li>
<li>Mix well and add Paneer cubes and stir for 1 minute.</li>
<li>Add remaining 2 tbsp corn flour in 1 cup water and add to Paneer mixture.</li>
<li>Cook until the mix thickens, add chopped spring onion and turn off the flame.</li>
<li>Paneer manchurian is ready to serve hot.</li>

<li>Cooking oil- 3 tbsp</li>
<li>Paneer(cheese)- 350 gms</li>
<li>Cumin seeds- 1 tsp</li>
<li>Chopped onions- 2</li>
<li>Chopped tomatoes- 3</li>
<li>Green chillies- 3</li>
<li>Red chilli powder- ½ tsp</li>
<li>Garam masala- 1 tsp</li>
<li>Coriander powder- 1 tsp</li>
<li>Turmeric- ½ tsp</li>
<li>Khoya/mawa- 100 gms</li>
<li>Fresh cream- 1 cup</li>
<li>Water- 1 cup</li>
<li>Salt to taste</li>
<li>Chopped coriander- 1 tbsp</li>
<li>Roasted cashew- 1 tbsp</li>
</ol>
<h4>Method:</h4>
<ol>
<li>Grind onions, green chillies and tomatoes and make a smooth paste.</li>
<li>Cut the paneer into small cubes.</li>
<li>Heat oil in a pan and splutter the cumin seeds.</li>
<li>Add onion paste and fry for a minute.</li>
<li>Add chilli powder, coriander powder, salt, garam masala and turmeric.</li>
<li>Fry again until oil separates and add khoya and malai.</li>
<li>Stir for a minute and add paneer cubes and water.</li>
<li>Cover the lid and cook for 4-5 minutes on medium flame.</li>
<li>Once the gravy thickens turn off the flame.</li>
<li>Garnish with roasted cashew and coriander, serve hot with naan.</li>

<li>Chopped tomatoes- 1/2 cup</li>
<li>Tomato puree- 1½ tbsp</li>
<li>Chilli powder- 1/2 tsp</li>
<li>Green chilli paste- 1/2 tbsp</li>
<li>Coriander seed powder- 1 tsp</li>
<li>Dried fenugreek- 1/2 tsp</li>
<li>Pav bhaji or chat masala- 1/2 tsp</li>
<li>Lemon juice- 1/2 tbsp</li>
<li>salt to taste</li>
</ol>
<h4>Method</h4>
<ol>
<li>Cut the fresh paneer into medium cubes.</li>
<li>Fry the cubes till the color of cubes change into light brown.</li>
<li>After that heat the oil in a pan, add the green chilli paste, stir gently for few seconds.</li>
<li>Then add the tomato puree, tomatoes, coriander seeds powder, chilli powder, pav bhaji or chat masala, salt, and dried fenugreek leaves.</li>
<li>Mix well all ingredients, cook for 3-4 minutes on slow flame, stir occasionally.</li>
<li>Finally add the fried paneer, cook again for 3-4 minutes.</li>
<li>After removing from the heat, add lemon juice.</li>
<li>Serve hot with parathas.</li>

<li>1½ tsp- Turmeric</li>
<li>5-6- Green chillies</li>
<li>2 tsp- Amchoor powder</li>
<li>2-3- Open green chillies</li>
<li>Salt to taste</li>
</ol>
<h4>Method:</h4>
<ol>
<li>Cut paneer into square pieces.</li>
<li>Grind ginger and garlic roughly.</li>
<li>Then put kalonji, saunf, methi dana, mustard seeds and cumin seeds into a bowl.</li>
<li>Heat the oil in pan.</li>
<li>Then add the mixture of seeds together into the heated oil, stir for few seconds.</li>
<li>Then add chopped green chillies and onions, Fry till onions change in to golden brown.</li>
<li>After that add turmeric and the garlic-ginger paste..</li>
<li>Add paneer cubes, cook for 2-3 minutes.</li>
<li>Add curd gradually and move slightly.</li>
<li>Finally add 1/2 tsp salt and amchoor powder, cook about 3-4 minutes till the curd dry up.</li>
<li>Serve it with butter naan.</li>

<li>1 tsp tandoori Masala</li>
<li>1 tsp Chaat Masala</li>
<li>2 tbsp Butter</li>
<li>3 tsp red Chilli Powder</li>
<li>2 tbsp each Onion, Carrots, Tomato, Capsicum, sliced in long stripes</li>
<li>Finely chopped Coriander leaves</li>
<li>Pinch tandoori color</li>
</ol>
<h4>Method</h4>
<ol>
<li>First add garam masala powder, tandoori color, red chili powder, coriander leaves, ginger garlic paste, tandoori masala, salt to curd, mix well.</li>
<li>Now add chopped paneer pieces, Keep it aside for an hour.</li>
<li>Heat 1 tbsp butter or oil in a pan.</li>
<li>Then fry the paneer masala until paneer changes color to golden brown.</li>
<li>Heat the remaining butter in pan and add chaat masala, sliced vegetables, and salt according to your taste.</li>
<li>Now pour over the paneer tikka.</li>
<li>Finally serve hot paneer tikka with sauce.</li>

<h4>Method</h4>
<ol>
<li>Clean and wash spinach(palak).</li>
<li>Boil the spinach in water.</li>
<li>After cooling the spinach  make puree of the spinach leaves.</li>
<li>Heat oil in pan and add cumin seeds.</li>
<li>When cumin seeds start to spluttering then add 1 chopped onions.</li>
<li>Fry until the onion change color to light brown.</li>
<li>Then grind the other 2 onion and the garlic flakes.</li>
<li>Add this paste in to the pan, fry till the oil separates</li>
<li>Add chilli powder, garam masala and salt.</li>
<li>Let boil the gravy for few minutes.</li>
<li>Cut the paneer to small cubes of desired size, fry in oil till the paneer turns to golden brown.</li>
<li>Finally add this paneer to the spinach gravy, cook for 6-7 minutes.</li>
<li>Serve hot with roties.</li>

<li>1½ tsp Coriander powder</li>
<li>3 tbsp Kashmiri chili powder</li>
<li>3 tbsp Cashew nut paste</li>
<li>1½ Cup Cream(Fresh)</li>
<li>1½ tsp Garam masala</li>
<li>Salt to taste</li>
</ol>
<h4>Method</h4>
<ol>
<li>First cut paneer(cheese) in small cubes.</li>
<li>Now fry the small paneer cubes.</li>
<li>Make them soft by soaking in warm water.</li>
<li>Now heat the butter and fry onion puree until it turns light brown.</li>
<li>Now stir above mixture with garlic-ginger paste, fry for a minute.</li>
<li>Add the coriander powder, turmeric powder, garam masala powder, cashew paste, tomato puree, Kashmiri chili powder, and salt and fry for few minutes again.</li>
<li>Add the paneer cubes, little water to above and cook it until the gravy becomes semi-solid.</li>
<li>In last step garnish it with fresh cream.</li>
<li>Now your paneer butter masala is ready to serve.</li>

<li>1/2 tsp turmeric powder</li>
<li>salt according to your taste</li>
<li>1 small green, yellow &#038; red capsicums, chopped</li>
<li>1/2 tsp cumin powder</li>
<li>1/4 tsp green cardamom powder</li>
<li>A pinch of each clove powder, black cumin powder &#038; fenugreek seeds</li>
<li>1 tbsp fresh coriander leaves, chopped</li>
</ol>
<h4>Method:</h4>
<ol>
<li>Heat ghee or butter in a pan.</li>
<li>Add chopped onions and fry quickly until brown.</li>
<li>Add ginger-garlic paste, move slightly for a few seconds.</li>
<li>Then add turmeric, red chili powder, coriander powder, black pepper powder, stir-fry until they change color.</li>
<li>Then add tomato puree, paneer cubes, capsicum and salt.</li>
<li>Then fry until the paneer change in to light brown color.</li>
<li>Finally add the cumin, cardamom, clove, black cumin powders, fenugreek seeds.</li>
<li>Cook paneer on slow flame till the paneer is well cooked.</li>
<li>Sprinkle coriander leaves and serve hot.</li>
