<h4>Ingredients:</h4>
<ol>
<li>Chana dal(split Bengal gram)- ¾ cup</li>
<li>Bottle gourd(lauki)- 1(medium)</li>
<li>Cooking oil- 2 tbsp</li>
<li>Cumin seeds- 1 tsp</li>
<li>Chopped onion- 1</li>
<li>Chopped green chillies- 2</li>
<li>Fine chopped ginger- 1 tsp</li>
<li>Red chilli powder- 1 tsp</li>
<li>Coriander powder- 1 tsp</li>
<li>Garam masala- ½ tsp</li>
<li>Turmeric- 1 tsp</li>
<li>Salt to taste</li>
<li>Chopped coriander- 2 tbsp</li>
<li>Water according to need</li>
</ol>
<h4>Method:</h4>
<ol>
<li>Wash the chana dal and soak in 3 cups of water for an hour.</li>
<li>Peel the skin of bottle gourd and cut into small cubes.</li>
<li>Drain the water of chana dal and shift dal in pressure cooker.</li>
<li>Add bottle gourd, 2 cups of water, turmeric and salt in cooker.</li>
<li>Cook on medium flame for 10-15 minutes.</li>
<li>Now heat oil in a pan and add cumin seeds.</li>
<li>When they start spluttering add chopped onion and green chillies.</li>
<li>Saute until golden brown and add ginger, chilli powder and coriander.</li>
<li>Add garam masala and saute for 2 minutes, add boiled dal and mix well.</li>
<li>Simmer for 5 minutes and spread chopped coriander leaves.</li>
<li>Serve hot with rice or roti.</li>

<li>Water- 6 cups</li>
<li>Vegetable oil- 1 tbsp</li>
<li>Chopped onion- 1</li>
<li>Sliced tomato- 1</li>
<li>Chopped green chillies- 2</li>
<li>Minced ginger- ½ tsp</li>
<li>Minced garlic 1 tsp</li>
<li>Coriander powder- 1tsp</li>
<li>Red chilli powder- ½ tsp</li>
<li>Garam masala- 1tsp</li>
<li>Turmeric- 1 tsp</li>
<li>Cumin seeds- 1 tsp</li>
<li>Asafoetida- ½ tsp</li>
<li>Salt to taste</li>
<li>Chopped coriander- 2 tbsp</li>
</ol>
<h4>For Tadka:</h4>
<ol>
<li>Desi ghee 2 tsp</li>
<li>Red chillies- 3-4</li>
<li>Mustard seeds- ½ tsp</li>
</ol>
<h3>Method:</h3>
<ol>
<li>Clean and wash the dal and shift in a pressure cooker.</li>
<li>Add turmeric, salt and water and cook for 15 minutes on medium flame.</li>
<li>Avoid excessive cooking which can make it like a paste.</li>
<li>Heat vegetable oil in a wok(karahi) and add cumin seeds and asafoetida.</li>
<li>When they start spluttering add chopped onion and green chillies.</li>
<li>Saute until onion change color in to light brown.</li>
<li>Then add tomato, coriander powder, chilli powder, garam masala.</li>
<li>Saute again until oil separates and pour the dal in to wok.</li>
<li>Now simmer the dal for 3-4 minutes.</li>
<li>Take a small fry pan and heat the ghee.</li>
<li>Now add chillies and mustard seeds.</li>
<li>Fry for a minute and pour on the top of dal.</li>
<li>This process is known as tadka. </li>
<li>Sprinkle chopped coriander and serve hot with roti/rice.</li>

<li>Coriander powder- 1 tsp</li>
<li>Garam masala- 1 tsp</li>
<li>Desi ghee/butter- 2 tsp</li>
<li>Salt to taste</li>
<li>Chopped coriander leaves</li>
<li>Water- 6 cups</li>
</ol>
<h4>Method:</h4>
<ol>
<li>Clean and wash all dals and shift in a pressure cooker.</li>
<li>Add water, vegetable oil, salt and turmeric and close the lid.</li>
<li>Cook the dal for 6-7 whistles on medium flame.</li>
<li>Heat butter/desi ghee in a wok(karahi) and add cumin seeds and asafoetida.</li>
<li>When they start spluttering add chopped onion and green chillies.</li>
<li>Saute until onion change color in to light brown.</li>
<li>Then add tomato, coriander powder, chilli powder, garam masala.</li>
<li>Saute again until oil separates.</li>
<li>Now add dals in gravy and cook for 5 minutes.</li>
<li>Spread coriander leaves and remove from heat.</li>
<li>Serve hot with butter and roti/rice.</li>

<li>Chopped tomatoes- 2(small)</li>
<li>Garlic paste- 1 tsp</li>
<li>Chopped green chilli- 1-2</li>
<li>Turmeric- ½ tsp</li>
<li>Red chilli- 1 tsp</li>
<li>Cumin seeds- 1 tsp</li>
<li>Cinnamon- 2-3 sticks</li>
<li>Coriander powder- ½ tsp</li>
<li>Salt to taste</li>
<li>Garam masala- 1 tsp</li>
<li>Chopped green coriander to garnish</li>
<li>Butter- 2 tbsp</li>
</ol>
<h4>Method:</h4>
<ol.
<li>Rajma is difficult to cook so soak it in water over night.</li>
<li>Remove the water from rajma and wash rajma and urad.</li>
<li>Take rajma and urad in a pressure cooker and add sufficient water, salt, turmeric, cinnamon.</li>
<li>Cook for 30-35 minutes, and remove from the heat.</li>
<li>Heat oil in kadai and splutter to cumin seeds.</li>
<li>After that add onion and green chilli and fry till the onion light brown.</li>
<li>Add tomato, ginger, garlic, coriander powder, red chilli and saute until oil separates.</li>
<li>Pour dal in to mixture and cook for 8-10 minutes to blend the dal.</li>
<li>Spread garam masala and garnish with chopped coriander leaves.</li>
<li>Add butter and serve hot with roti or rice.</li>

<li>2-3 flakes garlic</li>
<li>2-3 green chilies</li>
<li>½ tsp chilli powder</li>
<li>1 tsp kasoori methi (optional) </li>
<li>salt &#8211; to taste</li>
</ol>
<h4>Method</h4>
<ol>
<li>Cook moong dal with 4 cups of water, Add  little salt, &amp; garlic</li>
<li>Heat oil in a pan</li>
<li>Add onions in oil and fry it for few minutes.</li>
<li>Add tomatoes,  green chillies, chilli powder, and  kassori methi leaves.</li>
<li>After Cooking for few minutes, add the mashed moong dal.</li>
<li>Garnish with fresh coriander leaves.</li>
<li>Serve it with roties.</li>
