<li>1½ liter milk</li>
<li>½ cup basmati rice</li>
<li>8-10 saffron threads</li>
<li>1 cup sugar</li>
<li>½ tsp green cardamom powder</li>
<li>3 tbsp almonds</li>
<li>2 tbsp pistachios</li>
<li>4-5 drops rose water</li>
</ol>
<h4>Method:</h4>
<ol>
<li>Wash the rice and soak in water for 2-3 hours, drain the water.</li>
<li>Spread the rice on a cotton cloth, dry them for all over the night.</li>
<li>Grind the rice to make a grainy powder (it should be like semolina/suji).</li>
<li>Soak 2 tbsp of almonds in water for an hour, peel the skin of almonds.</li>
<li>Blend with saffron and ½ cup of milk, cut the remaining almonds into thin slices.</li>
<li>Now pour the milk in a heavy vessel pan, add the rice powder and cardamom powder.</li>
<li>Boil the milk on medium heat, keep stirring to avoid lumps.</li>
<li>When the milk begin to boil, slow the heat.</li>
<li>Add blended almond, chopped almonds and pistachios.</li>
<li>Shimmer till the milk became thick and the rice is cooked well, stir occasionally.</li>
<li>When the rice and milk mix well, turn off the heat.</li>
<li>Add sugar and rose water, allow to cool.</li>
<li>Firni is ready to serve chilled or warm.</li>

<li>4 tbsp sugar</li>
<li>2 tbsp chopped almonds and raisins</li>

<h4>Method:</h4>
<ol>
<li>Clean and wash the samak rice, soak the rice for 10-15 minutes.</li>
<li>Also soak the raisins in water.</li>
<li>Now take a heavy vessel pan, add milk, bring the milk to boil.</li>
<li>Once the milk boil, drain the water from rice, add to boiling milk.</li>
<li>Also keep stirring occasionally so that the rice does not stick to the bottom of the vessel.</li>
<li>When the rice and milk mix well, remove the vessel from the heat.</li>
<li>Add sugar, chopped almonds and soaked raisins, mix well.</li>
<li>Samak kheer is ready to serve.</li>

<ol>
<li>Parwal(Pointed Gourd)- 450 gms</li>
<li>Mawa(thickened milk)- 200 gms</li>
<li>Granulated sugar- 200 gms</li>
<li>Green cardamom powder- 1 tsp</li>
<li>Almonds- 15</li>
<li>Pistachios- 15</li>
<li>Saffron- 4-5 strands</li>
</ol>
<h4>Method:</h4>
<ol>
<li>Peel the skin of parwals, make lengthwise slit from top to bottom.</li>
<li>Take 3-4 cups water in a pan, then put the parwals into the boiling water.</li>
<li>Simmer for 4-5 minutes, now remove the excess of water from parwals.</li>
<li>Crush almonds and pistachios in mixer.</li>
<li>Take mawa in a wok, stir on slow flame till it became pinkish.</li>
<li>Allow to cool, add cardamom powder, saffron and crushed dry nuts.</li>
<li>Mix well, open the slit of parwal and fill the stuff.</li>
<li>Apply the same method for the rest of parwals, tie with thread to avoid opening of parwals.</li>
<li>Add 1 cup water and sugar in a pan, simmer, till the syrup is one thread consistency.</li>
<li>Put the parwals into syrup carefully, simmer for 3-4 minutes in low heat.</li>
<li>Remove carefully, allow to cool.</li>
<li>Serve chilled.</li>

<li>Pour the milk in a heavy vessel, bring to boil.</li>
<li>Simmer on slow flame till it reach to half consistency.</li>
<li>Now add grated apples and cook for 7-8 minutes, stir occasionally.</li>
<li>Stir cardamom powder and sugar, turn off the flame.</li>
<li>Garnish with almonds and pistachios, serve hot or chilled.</li>

<li>Instant coffee- ½ cup</li>

<li>Caster sugar- ½ cup</li>
<li>Mascarpone- 2 cup</li>
<li>Eggs(white part)- 2</li>
<li>Brandy- 250 ml</li>
<li>Water- 1 cups</li>
</ol>
<h4>Method:</h4>
<ol>
<li>Bring the water to boil and turn off the flame.</li>
<li>Add instant coffee into the hot water, shake well.</li>
<li>Mix caster sugar and brandy into the coffee mixture.</li>
<li>Soak the savoiardi biscuits into the coffee mixture.</li>
<li>When they soak completely remove carefully.</li>
<li>Now beat the white part of eggs and mix icing sugar.</li>
<li>Add mascarpone and whisk rapidly till foamy.</li>
<li>Place a layer of biscuits over a dish and cover them with half of egg mixture.</li>
<li>Again place a layer of biscuits and again cover with remaining egg mixture.</li>
<li>Place last layer of biscuits and cover with cocoa powder.</li>
<li>Shift in refrigerator for 3-4 hours to chill.</li>
<li>Tiramisu is ready to serve.</li>

<li>Vanilla essence- 6-7 drops</li>

<h4>Method:</h4>
<ol>
<li>Dissolve corn flour and cocoa powder in ½ cup of milk, keep aside.</li>
<li>Grate the chocolate and melt in a non stick pan on slow flame.</li>
<li>Stir remaining milk and cream slowly in chocolate.</li>
<li>Once it start to boil add cocoa mixture and vanilla essence.</li>
<li>Boil the mixture till thick and then turn off the flame.</li>
<li>Allow to cool and shift in refrigerator for 2-3 hours to chill.</li>
<li>garnish with cream and chocolate custard is ready to serve.</li>

<li>When it set completely demould and serve immediately.</li>

<li>Water- 2 tbsp</li>
<li>Fresh cream- 1 cup</li>
</ol>
<h4>Method:</h4>
<ol>
<li>Soak gelatin in 2 tbsp water.</li>
<li>Now pour milk, cream in a heavy vessel pan.</li>
<li>Add brown sugar and stir until boil.</li>
<li>Add coffee powder and gelatin, mix well.</li>
<li>Turn off the flame and strain through a sieve.</li>
<li>Break chocolate into small pieces in a bowl.</li>
<li>Add hot coffee cream over the chocolate.</li>
<li>Stir till the chocolate completely melt, allow to cool.</li>
<li>Pour this mixture into moulds and shift in freezer.</li>
<li>When set de-mould and serve mocha panna cotta.</li>

<li>Cottage cheese- 250 gms</li>
<li>Saffron strands- 8-10</li>
<li>Cardamom powder- 2 tbsp</li>
<li>Yellow color- 4-5 drops</li>
<li>Cashew- 3 tbsp</li>
<li>Almonds- 3 tbsp</li>
<li>Pistachios- 10-15</li>
<li>Sugar- 2½ cups</li>
<li>Water- 5 cups</li>
</ol>
<h4>Method:</h4>
<ol>
<li>Grind cashew, almonds, cardamom powder and pistachios in a grinder.</li>
<li>Grind until the dry fruits change into powder.</li>
<li>Dissolve saffron strands in 2 tbsp lukewarm milk and add to  powder.</li>
<li>Mix to make a thick paste and make small nut balls of the paste.</li>
<li>Knead cheese until it remove moisture and add yellow color in half of the cheese.</li>
<li>Now make a ball of white cheese and place nut ball into cheese ball carefully.</li>
<li>Now cover the white cheese ball with the colored cheese ball.</li>
<li>Repeat the same process for all the cheese balls.</li>
<li>Now boil water in a heavy vessel, add sugar and boil for one thread consistency.</li>
<li>Smoothly place the cheese ball into sugar syrup and boil for 15-20 minutes at medium flame.</li>
<li>Turn off the flame and allow to cool.</li>
<li>Serve rajbhog chilled with sugar syrup.</li>

<li>Blend cheese until it becomes smooth.</li>
<li>Add melted chocolate, cocoa powder and 1 cup of sugar.</li>
<li>Blend again till all the ingredients mix well.</li>
<li>Roll the dough in small size ball and coat them in remaining sugar.</li>
<li>Place them in a sheet and shift to refrigerator for 2 hours.</li>
<li>Chocolate truffles are ready to serve.</li>
