Ras Malai

Ingredients:

For cheese balls:

  1. milk- 1 liter
  2. All purpose flour- 2 tsp
  3. Lemon juice- 3 tbsp

For sugar syrup:

  1. 500- Sugar
  2. 3 cups- Water

For malai:

  1. 1 liter- Fresh milk
  2. 6 tbsp- Sugar
  3. One pinch saffron
  4. 3 tsp- Chopped Pistachios, Almonds for garnishing

Method:

  1. Bring the milk to boil, make paneer by adding lemon juice.
  2. Squeeze the paneer, knead it to make it smooth and thick.
  3. Add all purpose flour, again knead well.
  4. Make small cheese balls of dough(mixture).
  5. Take water and sugar in a saucepan for making sugar syrup.
  6. Boil it till the sugar dissolve in water, on cooling add cheese bolls.
  7. After that take milk in a heavy vessel and boil it until it becomes half, stir it to avoid sticking.
  8. Remove from the heat and add sugar.
  9. Finally squeeze the syrup from cheese balls carefully, add to the malai, garnish with dry fruits.
  10. Refrigerate ras malai and serve it chilled.
