Ingredients:
For cheese balls:
- milk- 1 liter
- All purpose flour- 2 tsp
- Lemon juice- 3 tbsp
For sugar syrup:
- 500- Sugar
- 3 cups- Water
For malai:
- 1 liter- Fresh milk
- 6 tbsp- Sugar
- One pinch saffron
- 3 tsp- Chopped Pistachios, Almonds for garnishing
Method:
- Bring the milk to boil, make paneer by adding lemon juice.
- Squeeze the paneer, knead it to make it smooth and thick.
- Add all purpose flour, again knead well.
- Make small cheese balls of dough(mixture).
- Take water and sugar in a saucepan for making sugar syrup.
- Boil it till the sugar dissolve in water, on cooling add cheese bolls.
- After that take milk in a heavy vessel and boil it until it becomes half, stir it to avoid sticking.
- Remove from the heat and add sugar.
- Finally squeeze the syrup from cheese balls carefully, add to the malai, garnish with dry fruits.
- Refrigerate ras malai and serve it chilled.
