Pork Roast

Ingredients:

  1. Skinned loin of pork- 1½ kg
  2. Olive oil- 1 tbsp
  3. Lemon juice- 1 tbsp
  4. Garlic paste- 2 tsp
  5. Chopped onion(chopped)- 1
  6. Chopped tomato- 1
  7. Chopped green chillies- 3
  8. Butter- 1 tbsp
  9. Black pepper- 1 tsp
  10. Rosemary(chopped)- 3 tbsp
  11. Bay leaves- 4-5
  12. Sweet pepper- 3 tsp
  13. Red vinegar- 2 tbsp
  14. Salt to taste

Method:

  1. Preheat the oven to 190ºC.
  2. Mix salt, ½ black pepper, 2 tsp sweet pepper, 1 tsp garlic, lemon juice and olive oil together.
  3. Slice the pork as thick or as thin as desired.
  4. Rub the pork with this mixture and shift the pork in a roasting tray.
  5. Cook the pork for 1 hour in oven or till it begin to crispy.
  6. Melt butter in a frying pan and add chopped onion, bay leaves and green chillies.
  7. When they turns to brown add tomato and saute.
  8. Now add remaining salt, black pepper, sweet pepper and garlic.
  9. Add Red vinegar and rosemary.
  10. Remove the pork from the dish carefully and spread this onion sauce over the tray.
  11. Place the pork over the sauce and again cook for 30 minutes in oven.
  12. Check that pork is crispy and tender.
  13. Serve it hot with sour cream.
