Ingredients:
- All purpose flour- 1½ cup
- Granulated white sugar- 80 gms
- Unsalted butter- 100 gms
- Light brown sugar- 50 gms
- Peanut butter- 100 gms
- Vanilla essence(optional)- 1 tsp
- Egg- 1
- Salt- a pinch
- Baking soda- ¼ tsp
- Chopped peanuts and cashew- ½ cup
Method:
- Preheat the oven to 375°F.
- Beat the butter and peanut butter by a hand mixer for few seconds.
- Now add white sugar ,brown sugar and baking soda, blend until soft and fluffy.
- Beat the salt, egg and vanilla essence into the mixture.
- Now add flour to make a dough, you can add chopped peanuts and cashew now.
- Mix well and keep aside for an hour.
- After an hour make small(1 inch) balls(1 inch) of the dough and arrange on a baking tray.
- Make a criss-cross pattern on the cookies by the fork.
- Bake the cookies for 10 minutes or until the cookies are crispy.
- Shift in a air tight container for long use.
