Patra
Ingredients:
- Arbi leaves(colocasia)- 9
- Soda bi carbonate- ½ tsp
- Jaggery- 1 tbsp
- Gram flour- 1 cup
- Cooking oil- 3 tbsp
- Mustard seeds- 1 tsp
- Asofoetida(hing)- ½ Tsp
- Dry chillies(broken)- 2
- Minced garlic- 1 tsp
- Red pepper- ½ tsp
- Chat masala- 1 tsp
- Tamarind(imli) juice- ¼ cup
- Salt to taste
Method:
- Wash the arbi leaves and keep aside.
- Add gram flour in a bowl and add tamarind juice, jaggery, salt and red pepper.
- Mix well and make a smooth and thick batter, add some water if necessary.
- Now apply the batter on dark green side of the large leaf.
- take another leaf and apply the batter and place in first leaf.
- make three rolls of all the leaves by same process.
- Bind tightly to all the rolls and steam for 30 minutes.
- Now cut in to small cubes and keep aside.
- Heat oil in a wok and splutter the mustard seeds.
- Add dry chillies and wait until they become dark brown.
- Add garlic and hing, after few seconds add arbi cubes and fry for 2-3 minutes.
- Sprinkle chat masala and serve hot.
