Mutton Biryani

Ingredients:

  1. Mutton- 500 gms
  2. Cooking oil- 5 tbsp
  3. Basmati rice- 1½ cups
  4. Yogurt- ½ cup
  5. Cumin seed- ½ tsp
  6. Green chillies- 2
  7. Chopped onions- 3
  8. Coconut- 2 tbsp
  9. Turmeric- 1 tsp
  10. Poppy seeds(powdered)- 1 tsp
  11. Ginger- 3 pieces(1 inch)
  12. Garlic- 4-5 flakes
  13. Coriander powder- 1 tsp
  14. Chilli powder- ½ tsp
  15. Black pepper- 4
  16. Bay leaves- 3
  17. Garam masala- 1 tsp
  18. Salt to taste
  19. Water- 5 cups or to need
  20. Grated coconut and roasted cashew- 2 tbsp each

Method:

  1. Wash the rice, soak in water for 15 minutes.
  2. Clean and cut the meat into small pieces.
  3. Rub the meat in yogurt, leave for 10 minutes.
  4. Blend 2 onions, green chillies, garlic, ginger and coconut, make a smooth paste.
  5. Now heat 3 tbsp oil in a large sauce pan, add cumin seeds.
  6. When they start spluttering add onion paste.
  7. Saute until onion color change to light brown.
  8. Now add coriander, chilli powder, ½ tsp turmeric, garam masala and salt.
  9. Fry for 2-3 minutes, add meat pieces and poppy seeds powder.
  10. Mix well, pour some water(almost 2 cups)
  11. Cook the meat on slow flame until the meat become soft.
  12. Heat the remaining 2 tbsp oil in a pan.
  13. Add remaining chopped onions, fry until the onions are tender.
  14. Add black pepper, bay leaves and ½ tsp turmeric.
  15. Fry for a minute, add rice.
  16. Fry again for a couple of minutes, sprinkle salt to taste.
  17. Add 3½ cups of water(double of the quantity), cover the lid.
  18. Cook the rice till the whole water absorb.
  19. Now remove from the flame, shift to a serving bowl.
  20. Mix the cooked meat into the rice.
  21. Garnish with roasted cashew and grated coconut, serve hot.
