Mutton Biryani
Ingredients:
- Mutton- 500 gms
- Cooking oil- 5 tbsp
- Basmati rice- 1½ cups
- Yogurt- ½ cup
- Cumin seed- ½ tsp
- Green chillies- 2
- Chopped onions- 3
- Coconut- 2 tbsp
- Turmeric- 1 tsp
- Poppy seeds(powdered)- 1 tsp
- Ginger- 3 pieces(1 inch)
- Garlic- 4-5 flakes
- Coriander powder- 1 tsp
- Chilli powder- ½ tsp
- Black pepper- 4
- Bay leaves- 3
- Garam masala- 1 tsp
- Salt to taste
- Water- 5 cups or to need
- Grated coconut and roasted cashew- 2 tbsp each
Method:
- Wash the rice, soak in water for 15 minutes.
- Clean and cut the meat into small pieces.
- Rub the meat in yogurt, leave for 10 minutes.
- Blend 2 onions, green chillies, garlic, ginger and coconut, make a smooth paste.
- Now heat 3 tbsp oil in a large sauce pan, add cumin seeds.
- When they start spluttering add onion paste.
- Saute until onion color change to light brown.
- Now add coriander, chilli powder, ½ tsp turmeric, garam masala and salt.
- Fry for 2-3 minutes, add meat pieces and poppy seeds powder.
- Mix well, pour some water(almost 2 cups)
- Cook the meat on slow flame until the meat become soft.
- Heat the remaining 2 tbsp oil in a pan.
- Add remaining chopped onions, fry until the onions are tender.
- Add black pepper, bay leaves and ½ tsp turmeric.
- Fry for a minute, add rice.
- Fry again for a couple of minutes, sprinkle salt to taste.
- Add 3½ cups of water(double of the quantity), cover the lid.
- Cook the rice till the whole water absorb.
- Now remove from the flame, shift to a serving bowl.
- Mix the cooked meat into the rice.
- Garnish with roasted cashew and grated coconut, serve hot.
