Khasta kachori

Ingredients:

For Dough:

  1. Plane flour(maida)- 1½ cup
  2. Soda bicarb- a pinch
  3. Ajwain- ½ tsp
  4. Ghee/oil- 4 tbsp
  5. Salt to taste
  6. Water according to need

For Stuff:

  1. Urad dal(split black grams)- 1 cup
  2. Oil/ghee- 2 tbsp
  3. Asafoetida(hing)- ½ tsp
  4. Grated ginger- 1 tsp
  5. Chopped green chillies- 2
  6. Cumin powder- ½ tsp
  7. Coriander powder- 1 tsp
  8. Red chilli powder- ½ tsp
  9. Ground fennel seeds(sounf)- ½ tsp
  10. Chopped cashew- 2 tbsp
  11. Raisins- 2 tbsp
  12. Salt to taste
  13. Oil for frying kachori

Method:

  1. Soak urad dal for all over the night.
  2. Rub and wash until the skin of urad dal completely remove.
  3. Coarsely grind urad dal with little water in grinder, keep aside.
  4. Knead flour in a mixing bowl and add soda bicarb, ajwain and salt.
  5. Add oil/ghee and mix well with your hands.
  6. Make a soft dough with the help of little water.
  7. Heat oil/ghee in a pan and add urad dal and all other ingredients.
  8. Fry til the stuff becomes dry, allow the stuff to cool.
  9. Now make roll of the dough and flatten ith your palm.
  10. Stuffing in the center, close the edges and make a ball.
  11. Roll the ball softly in shape of kachori with oiling palm.
  12. Repeat same process to the rest of the dough and stuff.
  13. Heat oil in a pan and fry one by one till golden from both side.
  14. Serve hot with chutney or sauce.
