Khaman Dhokla

Ingredients:

  1. Bengal Gram flour- 200 gms
  2. Oil – 2 tbsp
  3. Curd – ½ cup
  4. Water – ½ cup
  5. Baking Soda – ½ tsp
  6. Salt to taste
  7. Green Chili paste – 1 tsp
  8. Ginger paste- ½ tsp
  9. Turmeric- ½ tsp
  10. Sugar- 1 tsp
  11. Lemon juice- 1½ tsp
  12. Eno(fruit salt)- 1 packet
  13. Curry leaves- 5-6
  14. Mustard seeds- ½ tsp
  15. Slit green chilli- 3-4
  16. Fresh chopped coriander leaves

Method:

  1. Take gram flour in a bowl and add curd and water.
  2. Mix well until get a lump less and smooth batter.
  3. Then add soda and keep it for 2-3 hours.
  4. Take some water in a cooker and fit the baking dish, boil the water.
  5. Now add salt, sugar, green chilli paste, lemon juice, turmeric, ginger paste and half of the oil in batter.
  6. Mix well, add these all ingredient just before shifting it in baking dish.
  7. Grease or oiling the baking dish and shift the batter in to baking dish.
  8. After that mix eno to the batter.
  9. Cook the batter for 8-10 minutes without disturbing.
  10. Test by insert a tooth pick, if it comes clean remove from the heat.
  11. For tempering take oil in a pan and splutter to the mustard seeds and curry leaves and pour over the dhokla.
  12. Cool to cut the dhokla in to perfect squares.
  13. At last garnish with coriander leaves.
  14. Serve hot with chutney.
