Khaman Dhokla
Ingredients:
- Bengal Gram flour- 200 gms
- Oil – 2 tbsp
- Curd – ½ cup
- Water – ½ cup
- Baking Soda – ½ tsp
- Salt to taste
- Green Chili paste – 1 tsp
- Ginger paste- ½ tsp
- Turmeric- ½ tsp
- Sugar- 1 tsp
- Lemon juice- 1½ tsp
- Eno(fruit salt)- 1 packet
- Curry leaves- 5-6
- Mustard seeds- ½ tsp
- Slit green chilli- 3-4
- Fresh chopped coriander leaves
Method:
- Take gram flour in a bowl and add curd and water.
- Mix well until get a lump less and smooth batter.
- Then add soda and keep it for 2-3 hours.
- Take some water in a cooker and fit the baking dish, boil the water.
- Now add salt, sugar, green chilli paste, lemon juice, turmeric, ginger paste and half of the oil in batter.
- Mix well, add these all ingredient just before shifting it in baking dish.
- Grease or oiling the baking dish and shift the batter in to baking dish.
- After that mix eno to the batter.
- Cook the batter for 8-10 minutes without disturbing.
- Test by insert a tooth pick, if it comes clean remove from the heat.
- For tempering take oil in a pan and splutter to the mustard seeds and curry leaves and pour over the dhokla.
- Cool to cut the dhokla in to perfect squares.
- At last garnish with coriander leaves.
- Serve hot with chutney.
