Gajar Ka Halwa
Ingredients:
- Fresh carrot- 1½ kg
- Fresh milk- 2½ liter
- Khoya/mawa- 100 gms
- Sugar- 500 gms
- Green cardamom powder- ½ tsp
- Saffron threads- 4-5
- Chopped cashew & almonds- 2 tbsp
Method:
- First of all wash, peel and grate carrots.
- Then pour milk in a heavy vessel and boil it.
- Add carrot into milk and leave it to boil, stir occasionally.
- When it reduces to half then add sugar, saffron and cardamom powder and again boil.
- Reduce the heat and simmer and stir it until the mixture becomes thick.
- Remove from the heat and add grated khoya in to halwa.
- Garnish with chopped cashew & almonds.
- You can serve gajar halwa hot or cold.
Note:
- Khoya or mawa is basically dried milk and you can easily get from stores in India.
- To make it at home take 500 ml milk(for 100 gms) in a heavy vessel and boil and stir it till thick ball obtain.
