Gajar Ka Halwa

Ingredients:

  1. Fresh carrot- 1½ kg
  2. Fresh milk- 2½ liter
  3. Khoya/mawa- 100 gms
  4. Sugar- 500 gms
  5. Green cardamom powder- ½ tsp
  6. Saffron threads- 4-5
  7. Chopped cashew & almonds- 2 tbsp

Method:

  1. First of all wash, peel and grate carrots.
  2. Then pour milk in a heavy vessel and boil it.
  3. Add carrot into milk and leave it to boil, stir occasionally.
  4. When it reduces to half then add sugar, saffron and cardamom powder and again boil.
  5. Reduce the heat and simmer and stir it until the mixture becomes thick.
  6. Remove from the heat and add grated khoya in to halwa.
  7. Garnish with chopped cashew & almonds.
  8. You can serve gajar halwa hot or cold.

Note:

  • Khoya or mawa is basically dried milk and you can easily get from stores in India.
  • To make it at home take 500 ml milk(for 100 gms) in a heavy vessel and boil and stir it till thick ball obtain.
