Egg Fried Rice
Ingredients:
- Basmati rice- 1 cup
- Cooking oil- 3 tbsp
- Cumin seeds- 1 tsp
- Chopped tomatoes- 3
- Chopped onion- 2
- Chopped green chillies- 2
- Red chilli powder- ½ tsp
- Black peppercorns- 5-6
- Garam masala- ½ tsp
- Turmeric- ½ tsp
- Eggs- 4
- Salt to taste
- Water- 2½ cups
- Chopped coriander- 2 tbsp
Method:
- Soak the rice for 15 minutes and drain the water.
- Now take 2½ cups of water and salt in a pressure cooker and bring to boil.
- Add rice in this water and cook until whole the water is absorb
- Now heat 1 tbsp oil in a pan and add the beaten eggs in oil.
- Cook until well cooked and remove from the pan.
- Now add remaining oil and splutter the cumin seeds and peppercorns.
- After that add chopped onion and green chillies, fry till golden.
- Add chopped tomatoes and fry again till tomatoes become mushy.
- Now add turmeric, salt, garam masala, chilli powder, fried eggs and rice.
- Stir until rice and other ingredients mix well, fry for 10 minutes.
- Garnish with chopped coriander and serve hot.
