Egg Fried Rice

Ingredients:

  1. Basmati rice- 1 cup
  2. Cooking oil- 3 tbsp
  3. Cumin seeds- 1 tsp
  4. Chopped tomatoes- 3
  5. Chopped onion- 2
  6. Chopped green chillies- 2
  7. Red chilli powder- ½ tsp
  8. Black peppercorns- 5-6
  9. Garam masala- ½ tsp
  10. Turmeric- ½ tsp
  11. Eggs- 4
  12. Salt to taste
  13. Water- 2½ cups
  14. Chopped coriander- 2 tbsp

Method:

  1. Soak the rice for 15 minutes and drain the water.
  2. Now take 2½ cups of water and salt in a pressure cooker and bring to boil.
  3. Add rice in this water and cook until whole the water is absorb
  4. Now heat 1 tbsp oil in a pan and add the beaten eggs in oil.
  5. Cook until well cooked and remove from the pan.
  6. Now add remaining oil and splutter the cumin seeds and peppercorns.
  7. After that add chopped onion and green chillies, fry till golden.
  8. Add chopped tomatoes and fry again till tomatoes become mushy.
  9. Now add turmeric, salt, garam masala, chilli powder, fried eggs and rice.
  10. Stir until rice and other ingredients mix well, fry for 10 minutes.
  11. Garnish with chopped coriander and serve hot.
