Crispy Okra

Ingredients:

  1. Fresh okra- 250 gms
  2. Plain flour- ½ cup
  3. Tapioca flour- ¼ cup
  4. Baking powder- ½ tsp
  5. Water- ¼ cup
  6. Salt- ¼ tsp or to taste
  7. Oil for frying

Method:

  1. Wash okra well, leave them to dry.
  2. Take plain flour, tapioca flour, baking powder and water in a mixing bowl.
  3. You can use rice flour instead of tapioca flour in same quantity.
  4. Add salt, mix well to make a smooth batter.
  5. Dip the okras in this batter and coat each okra with batter.
  6. Now heat oil in a wok, deep fry the coated okra.
  7. Fry 5-6 of okra at a time, fry them until light brown and crispy.
  8. Repeat the same process to the rest of okra, drain the extra oil.
  9. Serve immediately with chilli fish sauce or soy sauce.
