Chinese Fried Vegetable

Ingredients:

  1. Oil- 1½ tbsp
  2. Yellow capsicum- 1
  3. Red capsicum- 1
  4. Carrots- 2
  5. Green capsicum- 1
  6. Mushrooms(sliced)- 4
  7. Spinach(chopped)- 1 cup
  8. Chopped spring onion- ½
  9. Vegetable stock- 2 cups
  10. Soy sauce- 1 tbsp
  11. Minced garlic- 1 tsp
  12. Corn starch- 1 tbsp
  13. Salt and red pepper to taste

Method:

  1. Cut all type capsicum into triangles and slice the carrots.
  2. Heat oil in a deep pan and add garlic.
  3. Fry for few seconds and add spring onion.
  4. After a minute add all other vegetables and saute for 2-3 minutes.
  5. Add soy sauce, salt and pepper and fry again for a minute.
  6. Mix corn starch in vegetable stock and add to the vegetables.
  7. Slow the flame and cover the lid, Cook until the moisture has evaporate.
  8. Chinese fried vegetable is ready to serve hot.
