Chinese Fried Vegetable
Ingredients:
- Oil- 1½ tbsp
- Yellow capsicum- 1
- Red capsicum- 1
- Carrots- 2
- Green capsicum- 1
- Mushrooms(sliced)- 4
- Spinach(chopped)- 1 cup
- Chopped spring onion- ½
- Vegetable stock- 2 cups
- Soy sauce- 1 tbsp
- Minced garlic- 1 tsp
- Corn starch- 1 tbsp
- Salt and red pepper to taste
Method:
- Cut all type capsicum into triangles and slice the carrots.
- Heat oil in a deep pan and add garlic.
- Fry for few seconds and add spring onion.
- After a minute add all other vegetables and saute for 2-3 minutes.
- Add soy sauce, salt and pepper and fry again for a minute.
- Mix corn starch in vegetable stock and add to the vegetables.
- Slow the flame and cover the lid, Cook until the moisture has evaporate.
- Chinese fried vegetable is ready to serve hot.
