Chhole Bhature
Ingredients:
For Bhature:
- All purpose flour/maida- 250 grams
- Sooji/Semolina- 25 grams(optional)
- Vegetable oil- 1 tbsp
- Salt to taste
- Yogurt- 1 cup
- Sugar- ½ tsp
- Baking powder- ½ tsp
- Lukewarm water to make dough
- Oil for deep fry
For Chhole:
- White chhole/Garbanzo beans- 250 grams
- Ginger garlic paste- 1 tsp
- Green chilli(slits)- 2-3
- Tomato puree- ½ cup
- Cumin seeds- ½ tsp
- Chopped onions- 2
- Coriander powder- 1 tsp
- Chilli powder- ½ tsp
- Amchur powder/Lemon juice- 1 tsp
- Turmeric powder- ½ tsp
- Garam masala- 1 tsp
- Chhola masala- 1 tsp
- Vegetable oil- 2 tbsp
- Tea bag- 1
- Salt to taste
- Sufficient water to boil chhole
- Chopped green coriander leaves
Mathod:
For Bhature:
- first of all filter maida and sooji in a large bowl and add vegetable oil.
- Then add salt, sugar, yogurt and baking powder, make a soft dough with lukewarm water.
- Leave the dough for 3-4 hours at warm place for fermentation.
- Now make Small balls of dough and Roll like puri(it should be thickener than puri).
- Take oil in a deep pan and deep fry to each bhatura until the both sides are golden brown.
For Chhole:
- Soak chhole all over the night and wash them.
- Boil chhole with sufficient water, salt and tea bag in a pressure cooker for 20-25 minutes.
- Touch the chhola if it is soft then remove the cooker from heat.
- Now take saute pan/karahi and heat the oil, add cumin seeds and splutter them.
- Add chopped onion and saute till golden brown, add ginger garlic paste and saute again.
- Now add turmeric powder, Salt, chilli powder, amchur/lemon juice and coriander powder and fry till the oil separates.
- Add tomato puree, green chilli, garam masala and chhola masala and saute.
- Now remove tea bag and pour chhola in to gravy and cook for a thick gravy.
- Garnish with chopped coriander leaves and chhole are ready.
- Serve with bhatura and salad.
