Ingredients:
- All purpose flour- 2 cups
- Unsalted soft butter- 150 gms
- Light brown sugar- 1 cup
- Baking powder- 1 tsp
- Cinnamon powder- ½ tsp
- Vanilla essence- 1 tsp
- Eggs- 2
- Salt- a pinch
- Fine chopped cashew
Method:
- Preheat the oven at 350°F.
- Whisk butter and brown sugar in a large mixing bowl.
- Add eggs and beat again and add vanilla essence.
- Add cinnamon powder, salt and baking powder.
- Add flour and make a smooth dough.
- Add chopped cashew now and mix well.
- Cover the dough and refrigerate for 4-5 hour.
- After that make small(1 inch) balls(1 inch) of the dough and arrange on a baking tray.
- Bake the cookies for 10 minutes or until the cookies are brown and crispy.
- Shift in a air tight container for long use.
