Bean Soup
Ingredients:
- Borlotti beans- 500 gms
- Chicken stock- 8 cups
- Chopped Pancetta- ½ cup
- Olive oil- 2 tbsp
- Chopped celery- ½ cup
- Diced carrots- 1 cup
- Chopped onion- 1
- Minced garlic- 1 tsp
- Chopped tomatoes- ½ cup
- Chopped Parsley- 3 tbsp
- Pepper and salt to taste
- Grated Parmesan cheese- ½ cup
Method:
- Heat oil in a large pan and stir chopped onion and garlic until it is tender.
- Add pencetta and fry till it is golden brown.
- Add celery, carrot and saute for a couple of minutes.
- Now add chicken stock, borlotti beans, Parsley and boil.
- Slow the flame and cook for 1 hour or till the beans are tender.
- Sprinkle salt and pepper and garnish with grated Parmesan cheese.
- Serve bean soup warm with fresh pasta.
