Bean Soup

Ingredients:

  1. Borlotti beans- 500 gms
  2. Chicken stock- 8 cups
  3. Chopped Pancetta- ½ cup
  4. Olive oil- 2 tbsp
  5. Chopped celery- ½ cup
  6. Diced carrots- 1 cup
  7. Chopped onion- 1
  8. Minced garlic- 1 tsp
  9. Chopped tomatoes- ½ cup
  10. Chopped Parsley- 3 tbsp
  11. Pepper and salt to taste
  12. Grated Parmesan cheese- ½ cup

Method:

  1. Heat oil in a large pan and stir chopped onion and garlic until it is tender.
  2. Add pencetta and fry till it is golden brown.
  3. Add celery, carrot and saute for a couple of minutes.
  4. Now add chicken stock, borlotti beans, Parsley and boil.
  5. Slow the flame and cook for 1 hour or till the beans are tender.
  6. Sprinkle salt and pepper and garnish with grated Parmesan cheese.
  7. Serve bean soup warm with fresh pasta.
