Balushahi

Ingredients:

  1. All purpose flour- 250 gms
  2. Ghee(melt and cool)- 75 gms
  3. Curd- 1 tbsp
  4. Baking soda- ¼ tsp
  5. Sugar- 250 gms
  6. Water- 125 ml
  7. Oil for deep frying
  8. Pistachios(crushed)- 2 tbsp
  9. Cardamom powder- ½ tsp

Method:

  1. Take a large mixing bowl, sieve all purpose flour.
  2. Add baking soda, curd, cardamom powder and ghee into the flour.
  3. Rub this mixture to make stiff dough(add some lukewarm water if needed).
  4. Cover the dough with cotton cloth, keep aside for an hour.
  5. Now make small ball(lemon size), flatten a bit with your palm.
  6. Press in center with the help of your thumb.
  7. Now heat ghee in a pan, when it heat slow the flame.
  8. Add few balls in ghee, fry on slow flame.
  9. Do not increase the flame until the ball will not be crispy.
  10. When one side is light brown then invert, fry the other side.
  11. Do not stir more and do not invert the balls.
  12. Repeat this process to all dough, keep aside to cool.
  13. Now bring the water to boil in a sauce pan.
  14. Add sugar, simmer to make one thread syrup.
  15. Now dip all balls into the syrup, wait for 10 minutes.
  16. Now remove balushahi from the syrup, leave to cool.
  17. Garnish with chopped pistachios and serve.
