Baby Corn

Ingredients:

  1. Baby corn- 10
  2. Green chillies- 2
  3. Ginger-garlic paste- 1 tsp
  4. Chopped spring onions- 2 tbsp
  5. Carrots(sliced)- 2
  6. Mushrooms(sliced)- 2 tbsp
  7. Salt and chilli powder to taste
  8. Vegetable stock or chicken stock- 3 cups
  9. Vinegar- 1 tsp
  10. Cooking oil- 2 tbsp

Method:

  1. Slit the baby corn into half, boil in salty water.
  2. Boil baby corn only for 2-3 minutes.
  3. Drain the water and keep aside.
  4. Now heat the oil an a sauce pan, add ginger-garlic paste.
  5. Saute for a minute, add green chillies, onions, mushrooms and carrots.
  6. Fry for 3-4 minutes, add salt, vinegar and red chillies.
  7. Now pour the vegetable stock, cover the lid.
  8. Cook for 7-8 minutes or until the whole water absorb.
  9. Serve hot with soy sauce.
